The Wine: Our 2017 Patriot Cabernet Sauvignon was aged exclusively in new American oak from Missouri, bottled March 17th, 2020, and bottle-aged for an additional five months.  Dark in color with beautiful garnet edges, this wine bursts with aromas of dark berries, cassis, toasty vanilla, anise, and cocoa.  Let the wine open and the wine becomes even more complex with aromatics of black cherry, caramelized marshmallow, dark cocoa, and graham crackers.  This full-bodied Cabernet has lush tannins and the finish lingers.  

Pairing: Pairings for this wine are endless.  With the combination of anise, dark cherry, cassis, graham crackers, and dark chocolate this is the perfect wine to pair with dessert.  Anyone with a sweet tooth would certainly enjoy this wine with s’mores!  As a bold Cabernet with chewy tannins and layers of flavor, you can always pair this with a meat dish too.  We recommend a buttery prime rib, aged gouda or parmesan, a BBQ bacon burger, or grilled portabella with a balsamic glaze for those who don’t eat meat. 

This deep, ruby red Cabernet has the depth and complexity found in our estate Cabernet with very different characteristics overall. The nose opens with an incredible toasty oak influence. Enjoy notes of luscious blackberry, dark cherry, blueberry preserves, and dried cranberry, black tea, violets, eucalyptus-menthol, tobacco, and wet stone. On the palate, raspberry cola, dark currant, red fruit, vanilla, and leather are most notable. Notes of fennel and anise steal the finish, which lingers just long enough. The acidity is excellent and the tannins are like a velvet glove: gripping, but soft and smooth. This wine can easily be enjoyed now, but will continue to improve over the next 5-7 years. Pair this Cabernet with red wine and thyme braised pork, sausage and white bean soup, pork schnitzel with wild mushrooms, herb-flanked tri tip, or pork tenderloin in cinnamon herb black cherry sauce.

Winemaking Style: We hand-harvested our Malbec at night to receive the fruit while it was cool.  This helps us retain the intense fruit component of the grapes.  Malbec is traditionally dark and fruity and this one hits the mark.  It was barrel-aged for eighteen months in Hungarian and American oak and is dedicated to Sylvia Clarin, who gave birth to our winemaker.

The Wine: The 2018 Malbec was bottled on May 27th, 2020. This small production Malbec has a deep purple color.  It opens with hints of blueberry, anise, and vanilla.  The blackberry fruit is intense and weaves perfectly with the slight toast and vanilla from the oak aging.  The wine finishes with elegantly smooth tannins.  Pair with a nice blue cheese burger or carnitas tacos. 

The Wine: Our Chardonnay is light straw yellow with notes of lemon, lime, pear, green apple, and white peach. This smooth Chardonnay is an example of a classic California Chardonnay. It hits the palate with cream, butter, and toasty vanilla, while the subtle fruit notes still linger in the background. There is a soft and delicate finish that leaves just the right amount of butterscotch, tropical fruit, and toasty oak flavors. Enjoy this wine with brie cheese and peach-pepper bourbon sauce, prawns in a white wine lemon butter sauce on zucchini noodles, or pair it with grilled nectarines and vanilla ice cream on cream biscuits.

Mother Nature blesses us with fabulous growing seasons and then tries our skill with more difficult growing seasons. The idea behind Timeless is to capture the greatness from each vintage and allow for that to shine through in a multi-vintage wine. Timeless is 100% Cabernet Sauvignon from 3 vintages: 2015, 2016, and 2017. This deep, dark garnet Cabernet has tons of fruit on the nose, namely black cherry, cassis, and dark berries, with hints of vanilla and leather, On the palate, this easy-sipping Cabernet has notes of baking spice, graphite, and tobacco, along with impressions of dark fruit. The tannins are supple, incredibly smooth, and leave notes of ripe cherry on your tongue. Enjoy it alongside a simple charcuterie board with classic salami, aged gouda, and cherry jam on crostini. Timeless Lot 567 would also pair well with beef tagliata and an arugula salad, spaghetti in a bolognese sauce, and an all-American cheeseburger.
